Chocolate Frosting


Makes enough for one round layer cake

3 cups (18 oz/560 g) semisweet chocolate chips 
3 cups (750 ml) heavy cream, plus more as needed

1. Put the chocolate chips into the bowl in a mixer. Set aside. In a pan over moderate temperature, bring the cream to a simmerfor about 3 minutes. Serve the hot cream over the chocolate and let it sit at room temperature for about 10 mins. Utilizing a hand-held whisk, mix until the mixture becomes velvety and smooth, and then cool completely.

2. The bowl should be connected to the stand mixer equipped with a whisk attachment. beat it at very high until it appears light and fluffy, approximately 3 minutes. If it's too thick, add 1 tablespoon of cream at a time till the consistency you want has been achieved.
